Ingredients List:
- Chocolate Chips: 12 ounces
- Butterscotch Chips: 12 ounces
- Chow Mein Noodles: 12 ounces
- Sprinkles: Optional, for decoration
How to Make No-Bake Haystack Cookies:
1. Preparation:
- Lay out a baking sheet and line it with parchment paper or a silpat mat. This will be used to place the cookies for setting.
- Have a large mixing bowl ready for combining the ingredients.
2. Melting the Chips:
- In a microwave-safe bowl, combine the chocolate chips and butterscotch chips.
- Place the bowl in the microwave and heat at full power for 30 seconds.
- After 30 seconds, remove the bowl and give the chips a good stir.
- Repeat the heating and stirring process in 30-second increments until both the chocolate and butterscotch chips have melted completely and the mixture is smooth.
3. Combining with Chow Mein Noodles:
- Pour the melted chip mixture over the chow mein noodles in the large mixing bowl.
- Gently stir until all the noodles are well-coated with the melted mixture.
4. Forming the Cookies:
- Using a spoon, scoop out heaping tablespoons of the coated chow mein noodles.
- Place each scoop onto the prepared baking sheet, ensuring there’s space between each cookie.
- If you’re using sprinkles for decoration, now is the time to sprinkle them over the cookies.
5. Setting the Cookies:
- Allow the cookies to set at room temperature. This should take approximately 20-30 minutes. The cookies should be firm to the touch when they are set.
6. Storing:
- Once set, transfer the cookies to an airtight container.
- Store them at room temperature or in the refrigerator. If you want to keep them for more than a week, store them in the refrigerator.
- For storing them even longer, freeze the cookies in an airtight container for up to 2 months.
Tips & Variations:
- For a different flavor, consider swapping out the chocolate and butterscotch chips for white chocolate chips.
- You can add a handful of nuts or shredded coconut for added texture and flavor.
- For a spicy twist, skip the butterscotch, double the chocolate, and add a pinch of cayenne pepper.
- You can mix a tablespoon of peanut butter into the melted chips for a nutty flavor.
- You can also blend toffee chips into the mixture for a crunchy surprise.
