Ingredients List:
Muffin Batter:

- 1 ½ Tsp. Baking powder
- ½ Tsp. Salt
- ½ Tsp. Bicarbonate of soda
- 3 medium eggs, room temperature
- 1 Tsp. Vanilla extract
- 200 g Sugar (1 Cup)
- 280 ml Buttermilk or yogurt, chilled (1 Cup + 2 Tbsp.)
- 140 ml Sunflower or corn oil (⅔ Cup)
Chocolate Flavor:
- 20 g Unsweetened Cocoa powder (2 ½ Tbsp.)
How to Make Marble Muffins:
1. Preheat and Prepare
- Preheat your oven to 210°C / 410°F.
- Line a 12-cup muffin pan with paper liners or grease it with non-stick cooking spray.
2. Mix Dry Ingredients
- In a large mixing bowl, sift together the all-purpose wheat flour, baking powder, salt, and bicarbonate of soda.
- Give it a brief stir to ensure the ingredients are evenly distributed.
3. Prepare Wet Ingredients
- In a separate bowl, whisk together the room temperature eggs, sugar, vanilla extract, chilled buttermilk (or yogurt), and oil.
- Ensure all the ingredients are well integrated and the mixture is smooth.
4. Combine the Mixtures
- Gradually add the wet ingredients to the bowl containing the dry ingredients.
- Mix gently just until everything is moistened and lump-free. Be careful not to overmix to keep the muffins fluffy.
5. Create Chocolate Batter
- Divide the batter equally into two separate containers.
- In one of the containers, sift in the unsweetened cocoa powder and mix until you have a smooth chocolate batter.
6. Fill the Muffin Cups
- Spoon the vanilla and chocolate batters alternately into the prepared muffin cups, creating a marble effect.
- Ensure each muffin cup is filled to the top for a nice muffin dome.
7. Bake and Test
- Place the muffin pan in the preheated oven and bake for approximately 15 minutes.
- Check the doneness by inserting a skewer into the center of a muffin; it should come out clean.
8. Cool and Serve
- Once baked, allow the muffins to rest in the pan for 5 minutes.
- Gently unmold them and transfer to a wire rack to cool completely.
- Once cooled, your Marble Muffins are ready to be served and enjoyed!
