Ingredients:
Crust:
- 2 cups graham cracker crumbs (roughly 16 full graham crackers)

- 2 packages (8 ounces each) of cream cheese, softened

- 2 eggs

- 1 cup packed light brown sugar

How to Make Pecan Pie Cheesecake Bars:
1. Preparing the Crust:
- Begin by placing the graham crackers in a food processor and pulsing until you achieve fine crumbs.
- Add the sugar and melted butter to the crumbs, and pulse again to combine everything evenly.
- Press this mixture firmly into the base of a greased 13″ x 9″ baking dish, creating an even layer. Set aside.
2. Creating the Cheesecake Layer:
- In a large mixing bowl, add the softened cream cheese and sugar. Using an electric mixer, beat until smooth and creamy.
- Incorporate the eggs one at a time, mixing well after each addition.
- Add the vanilla extract and mix to combine.
- Gently spread the cream cheese mixture over the prepared crust in an even layer.
- Place the dish in the refrigerator and allow it to chill for at least 30 minutes.
3. Preparing the Pecan Pie Topping:
- In a medium saucepan, melt the butter over medium heat.
- Once melted, add the heavy cream, brown sugar, vanilla extract, and corn syrup. Stir to combine.
- Allow the mixture to come to a gentle boil, stirring continuously.
- Add the chopped pecans and stir until they are fully coated with the mixture.
4. Assembling and Baking:
- Preheat your oven to 350°F (175°C).
- After the cream cheese layer has chilled, pour the pecan mixture over it, spreading evenly.
- Place the baking dish in the preheated oven and bake for approximately 40 minutes, or until the top is golden brown and the filling has set.
- Remove from the oven and allow the bars to cool to room temperature. Then, refrigerate for several hours to allow the layers to set.
