The Copycat Crumbl Reese’s Peanut Butter Cup Cookie is a delightful recreation of the popular Crumbl cookie. This homemade version combines the irresistible flavors of creamy peanut butter and rich chocolate, resulting in a large, satisfying cookie that mirrors the original in taste and texture.

Ingredients:

Cookies:

  • 1 1/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, room temperature
  • 1/3 cup creamy peanut butter
  • 1/3 cup light brown sugar
  • 1/3 cup white sugar
  • 1 egg, room temperature
  • 1/2 teaspoon vanilla extract
  • 5 Reese’s Peanut Butter Cups, chopped

Topping:

  • 2/3 cup Reese’s Peanut Butter Baking Chips
  • 1 Tablespoon butter
  • 2-3 Reese’s Peanut Butter Cups, chopped

1. Prepare the Oven and Baking Sheets

  • Preheat the oven to 350 degrees.
  • Line two standard-sized cookie sheets with parchment paper.

2. Mix Dry Ingredients

  • In a small bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Set this mixture aside for later use.

3. Prepare Wet Ingredients

  • In a large mixing bowl or using a stand mixer, beat together the room temperature butter, creamy peanut butter, white sugar, and light brown sugar until the mixture is smooth and creamy.

4. Combine Wet and Dry Ingredients

  • Add the egg and vanilla extract to the wet mixture, continuing to beat until well combined.
  • Gradually add the dry flour mixture, stirring until fully incorporated.

5. Add Chocolate

  • Gently fold in the chopped Reese’s Peanut Butter Cups into the cookie dough.

6. Shape and Bake Cookies

  • Divide the dough into eight equal pieces and roll each into a ball.
  • Place the balls on the prepared baking sheets, ensuring ample space between each cookie.
  • Flatten each cookie ball to about 1/2 inch thick.
  • Bake in the preheated oven for approximately 12 minutes. The cookies should have set edges and soft centers.

7. Prepare and Apply Topping

  • While the cookies are cooling, melt the peanut butter baking chips and 1 tablespoon of butter together, either in a microwave-safe bowl or using a double boiler.
  • Once melted, stir until the mixture is smooth and creamy.
  • Spread a spoonful of the melted peanut butter mixture on top of each cooled cookie.
  • Quickly top with additional chopped Reese’s Peanut Butter Cup pieces before the topping sets.
