Snickerdoodle Cobbler is a cozy, cinnamon-spiced dessert that’s like a hug in a bowl. With a buttery, cookie-like topping and a warm, gooey center, it’s the perfect treat to satisfy your sweet tooth.

Ingredients:

For the Cobbler Base:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup milk, at room temperature
  • 1/3 cup unsalted butter, melted

Cinnamon Sugar Topping:

  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

For the Snickerdoodle Layer:

  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 cups hot water

How to Make Snickerdoodle Cobbler:

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9 inch baking dish with butter or a non-stick cooking spray to prevent sticking.
  2. Create the cobbler base: In a medium-sized mixing bowl, sift together 1 cup of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Add in 3/4 cup of granulated sugar and 1 teaspoon of ground cinnamon, mixing until well combined.
  3. Combine with wet ingredients: Pour in 1/2 cup of room temperature milk and 1/3 cup of melted unsalted butter into the dry ingredients. Stir the mixture gently until it’s just combined, being careful not to overmix.
  4. Prepare the baking dish: Transfer the cobbler base batter into your greased baking dish, using a spatula to spread it evenly across the bottom.
  5. Mix the cinnamon sugar topping: In a small bowl, blend 1/2 cup of granulated sugar with 1 teaspoon of ground cinnamon. Sprinkle this sweet mixture evenly over the cobbler base in the dish.
  6. Layer the snickerdoodle topping: In another small bowl, combine another 1/2 cup of sugar with 1 teaspoon of cinnamon. Sprinkle this over the previous cinnamon sugar layer.
  7. Add hot water: Gently pour 2 cups of hot water over the entire mixture in the baking dish. Do this slowly, so you don’t disturb the layers. It’s important not to stir the mixture at this point, as the water will create a syrupy layer during baking.
  8. Bake the cobbler: Place the baking dish in the preheated oven. Bake for 40-45 minutes, or until the top is set and has a golden brown hue.
  9. Cool and serve: Once baked, remove the cobbler from the oven and allow it to cool for a few minutes. The cobbler is best served warm. For an extra indulgent treat, add a scoop of vanilla ice cream on top or a dollop of whipped cream.
