Strawberry Cheesecake Bars are a delicious dessert featuring a crisp vanilla wafer crust, a rich cream cheese filling, and vibrant strawberry flavor. They’re simple to make, requiring no baking, and are perfect for any occasion that calls for a sweet, fruity treat.
Ingredients:
Crust and Topping:
- 1 (11-ounce) box Vanilla Wafers
- 2 cups Freeze Dried Strawberries
- 3/4 cup Butter, melted
Filling:
- 1 1/2 cups Strawberries, sliced
- 16 ounces Cream Cheese, softened
- 3/4 cup Granulated Sugar
- 2 teaspoons Cornstarch
- 1 teaspoon Vanilla Extract
How to Make Amazing Strawberry Cheesecake Bars:
Prepare The Crust And Topping:
- Prepare the Baking Dish: Begin by lining a 9×9 or 8×8 inch square baking dish with foil. Ensure there’s an overhang on the sides for easy removal later.
- Process the Vanilla Wafers: In a food processor or high-powered blender, add the vanilla wafers. Pulse them until you achieve a fine, sandy texture.
- Incorporate Strawberries and Butter: To the finely ground wafers, add in the freeze-dried strawberries and melted butter. Pulse again until the mixture is thoroughly combined and evenly moistened.
- Form the Crust: Take half of your wafer mixture and pour it into the prepared baking dish. Using a flat tool or your hands, press the mixture down firmly and evenly to form the crust.
- Reserve Topping: Place the remaining wafer mixture into a separate bowl. This will be used later as the topping.
- Chill: Move the baking dish with the crust and the bowl with the topping mixture into the refrigerator. This allows the crust to firm up while you prepare the filling.
Prepare The Filling:
- Blend the Strawberries: In a blender or food processor, blend 1 1/2 cups of sliced strawberries until smooth.
- Mix the Cheesecake Filling: In a large bowl, combine the softened cream cheese, granulated sugar, cornstarch, and vanilla extract. Beat these ingredients together until smooth.
- Combine with Strawberry Puree: Gently fold the strawberry puree into the cream cheese mixture until well incorporated.
- Assemble the Bars: Pour the cheesecake filling over the chilled crust. Spread it evenly using a spatula or the back of a spoon.
- Add the Topping: Sprinkle the reserved wafer and strawberry mixture over the top of the filling.
- Chill to Set: Refrigerate the bars for at least 4 hours or until set. This step is crucial for the bars to firm up and develop the right texture.
- Serve: Use the foil overhang to lift the bars out of the pan. Cut them into squares and serve chilled.
