How to Make Bow Tie Pasta with Greens and Vegan Sausage:

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to the package instructions until al dente. Drain and set aside, reserving some pasta water.
  2. Prepare Vegetables: While the pasta is cooking, blanch the broccoli florets in boiling water for 2-3 minutes until bright green and slightly tender. Remove with a slotted spoon and set aside. Sauté the kale in the same boiling water for about 1 minute. Drain and set aside.
