Butter cookies are like the best buddies of your coffee or tea – they’re easy to make, and oh-so-good! I promise, once you try them, you’ll want to bake them over and over again.
Ingredients:
- 1 cup unsalted butter (that’s 2 sticks, make sure they’re nice and soft)
- 3/4 cup sugar (the white, granulated kind)
- 1 egg (just one, and let it hang out to room temp)
- 1 teaspoon of the good stuff – pure vanilla extract
- 2 1/4 cups all-purpose flour (keep some extra for dusting)
- 1/2 teaspoon baking powder
- A pinch of salt (1/4 teaspoon to be exact)

Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, which should take about 3-4 minutes with an electric mixer.
- Beat in the egg and vanilla extract until thoroughly combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing on low speed until a dough forms.
- Transfer the dough to a lightly floured surface. Divide the dough into two parts. Roll out one part of the dough to about 1/4 inch thickness.
- Use cookie cutters to cut out shapes or a small glass to make round cookies. Place the cookies on the prepared baking sheet.
- If you want to use a piping bag, transfer the other half of the dough into a piping bag fitted with a large star tip, and pipe the dough into swirls or other shapes directly onto the baking sheet.
- Bake the cookies for 12-15 minutes, or until they are lightly golden around the edges. Keep an eye on them as they can go from perfect to overdone quickly.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
