Ingredients:
- 4 large flour tortillas
- 1/2 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (16 oz) refried beans
- 1 cup enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tomato, diced
- 2 green onions, thinly sliced
- Vegetable oil for frying
After gathering your ingredients, the real fun begins. The process is simple: you’ll brown the meat, layer the beans and beef between tortillas, and top with cheese and sauce. In just a few steps, you’ll have a delicious Mexican Pizza ready to enjoy!
Instructions:
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then add taco seasoning and water according to the seasoning packet’s instructions. Simmer until the mixture thickens, then remove from heat.
- In a separate pan or in the microwave, warm the refried beans until they’re easily spreadable.
- In a small frying pan, heat a thin layer of vegetable oil over medium heat. Fry each tortilla one at a time until crispy, which should take about 30 seconds per side. Drain on paper towels.
- Preheat your oven to 375°F (190°C).
- To assemble the pizzas, spread a layer of refried beans on two tortillas. Top with the seasoned ground beef.
- Place another tortilla on top of the beef layer to create a ‘sandwich’. Spoon enchilada sauce over the top tortilla and spread it out.
- Mix the cheddar and Monterey Jack cheeses together and sprinkle over the enchilada sauce. Add a generous amount for that gooey cheese pull.
- Bake in the oven for about 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and immediately top with fresh diced tomatoes and sliced green onions.
