Ingredients:
- 8 corn tortillas
- 2 cups shredded mozzarella or Oaxaca cheese
- Cooked birria meat (from the previous recipe)
- Chopped cilantro for garnish
- Lime wedges for serving
Quesatacos are cheesy tacos with birria meat inside. You will use corn tortillas, put cheese on them, and then the birria meat. When you cook them, they get crispy and the cheese melts. Put some green stuff (cilantro) on top to make it look nice and give extra taste. You can also squeeze some lime on them for a zingy flavor. Let’s make some quesatacos!
Instructions:
- Take a pan and heat it up on the stove. You want it to be pretty hot.
- Take the corn tortillas and dip them quickly into the birria broth so they get a little wet. This makes them tasty and easy to cook.
- Put the wet tortillas in the hot pan with a little bit of oil. Cook them for about a minute on one side.
- Sprinkle cheese on top of the tortillas. Wait until it starts to melt.
- Put some of the birria meat you made on one half of each tortilla.
- Fold the tortilla over the meat so it looks like a taco. Press it down a little with a spatula.
- Cook the taco until the outside is crispy and the inside is warm and the cheese is all melted.
- Take the quesatacos out of the pan and put them on a plate. Sprinkle the chopped cilantro over them.
- Serve with lime wedges. You can squeeze the lime on the quesatacos if you like.
