Homemade Lemon Truffles

Hey friends! I just whipped up the easiest batch of Lemon Truffles and guess what? You can too! This recipe is super simple and will give you about 20 delightful truffles to enjoy. Let’s make some zesty treats together!

Ingredients:

  • 1 cup white chocolate chips
  • 3 tablespoons unsalted butter
  • 3 tablespoons heavy cream
  • 1 teaspoon lemon extract
  • Zest of 1 lemon
  • 1 cup powdered sugar, plus more for coating

Instructions:

  1. In a medium microwave-safe bowl, combine the white chocolate chips, butter, and heavy cream.
  2. Microwave in 30-second intervals, stirring in between, until the mixture is fully melted and smooth.
  3. Stir in the lemon extract and lemon zest until well combined.
  4. Cover the bowl with plastic wrap and refrigerate for about 2 hours, or until the mixture is firm enough to handle.
  5. Once chilled, prepare a small bowl with powdered sugar for coating.
  6. Use a teaspoon or a melon baller to scoop out portions of the chilled lemon mixture, then roll them into balls.
  7. Roll the truffle balls in the powdered sugar until they are well coated.
  8. Place the coated truffles on a parchment-lined tray or plate.
  9. Refrigerate the truffles for an additional 30 minutes to set.
  10. Serve the truffles chilled, and store any leftovers in an airtight container in the refrigerator.

Tips:

  • If the mixture is too soft to roll, chill it for a longer period until it’s firm enough.
  • You can also use lemon juice in place of extract for a more natural flavor; just adjust to taste.
