- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Zest of 1 lemon (optional)
For the Filling:
- 1 cup dulce de leche
- Desiccated coconut (for rolling)

Instructions:
- Preparation of Dough:
- In a large bowl, sift together the cornstarch, flour, and baking powder.
- In a separate bowl, cream the butter and sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Mix in the vanilla extract and lemon zest.
- Gradually incorporate the dry ingredients into the butter mixture, forming a soft dough.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Baking the Cookies:
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
- Use a round cookie cutter to cut out the cookies and place them on the prepared baking sheets.
- Bake for 12-15 minutes or until they are just beginning to turn golden. Let them cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
- Assembling the Alfajores:
- Spread a generous amount of dulce de leche on the flat side of one cookie.
- Place another cookie on top, gently pressing to create a sandwich.
- Roll the edges in desiccated coconut.
