Alfajores de Maicena are delightful cookies from Argentina. They have a sweet filling and soft cookies. You’ll love making and eating them!

Ingredients:

For the Cookies:

  • 1 2/3 cups cornstarch (Maicena)
  • 1 1/4 cups all-purpose flour
  • 1/2 cup sugar
  • 200 g unsalted butter, at room temperature
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Zest of 1 lemon (optional)

For the Filling:

  • 1 cup dulce de leche
  • Desiccated coconut (for rolling)

Instructions:

  1. Preparation of Dough:
    • In a large bowl, sift together the cornstarch, flour, and baking powder.
    • In a separate bowl, cream the butter and sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Mix in the vanilla extract and lemon zest.
    • Gradually incorporate the dry ingredients into the butter mixture, forming a soft dough.
    • Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  2. Baking the Cookies:
    • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
    • On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
    • Use a round cookie cutter to cut out the cookies and place them on the prepared baking sheets.
    • Bake for 12-15 minutes or until they are just beginning to turn golden. Let them cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  3. Assembling the Alfajores:
    • Spread a generous amount of dulce de leche on the flat side of one cookie.
    • Place another cookie on top, gently pressing to create a sandwich.
    • Roll the edges in desiccated coconut.
