How to Make Brussels Sprout and Shishito Pepper Pizza:
If Making Your Own Dough:
- Prepare the Yeast: Dissolve sugar in warm water in a bowl, and sprinkle yeast on top. Let it sit for about 10 minutes, until it becomes frothy.
- Mix the Dough: In a large bowl, combine flour, salt, yeast mixture, and olive oil. Stir until the dough just begins to come together.
- Knead: Turn out onto a lightly floured surface and knead until smooth and elastic, about 7 minutes.
- First Rise: Place the dough in a well-oiled bowl, cover with a damp cloth, and set aside to rise for about an hour, or until it doubles in size.
Preparing the Toppings:
- Roast the Brussels Sprouts: Preheat your oven to 425°F (220°C). Toss Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast until crispy, about 20-25 minutes.
- Prepare the Peppers: In the meantime, toss the shishito peppers with a bit of olive oil and a pinch of salt.
Make the White Sauce:
- Melt Butter: In a saucepan over medium heat, melt the butter.
- Add Flour: Whisk in flour and cook for 1-2 minutes.
- Add Cream: Slowly add heavy cream, whisking continuously until thickened.
- Add Cheese: Stir in Parmesan cheese and season with salt and white pepper. Remove from heat once the cheese has melted and the sauce is smooth.
Assemble and Bake the Pizza:
- Preheat the Oven: Increase the oven temperature to 475°F (245°C), or as high as it will go.
- Prepare the Dough: Roll out the risen dough to fit your pizza pan or stone.
- Apply Sauce: Spread a thin layer of white sauce over the dough.
- Add Cheese: Sprinkle with shredded mozzarella.
- Arrange Toppings: Distribute the roasted Brussels sprouts and shishito peppers over the cheese.
- Bake: Place in the oven and bake for about 12-15 minutes or until the crust is golden and cheese is bubbly.
- Garnish: Remove from oven, and garnish with shaved Parmesan and red pepper flakes if desired.
