Brussels Sprout and Shishito Pepper Pizza is a tasty dish with a crunchy crust. On top, there are green Brussels sprouts and shishito peppers that have been cooked until they’re a little black. It’s all covered with melted cheese and a creamy white sauce.

Ingredients:

For the Pizza Dough (or use store-bought dough):

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 teaspoon sugar
  • 1 cup warm water (110 degrees F/45 degrees C)
  • 2 1/2 cups bread flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt

Toppings:

  • 1 cup Brussels sprouts, trimmed and halved
  • 1/2 cup whole shishito peppers
  • Olive oil, for drizzling
  • Salt and pepper, to taste
  • 1 cup mozzarella cheese, shredded
  • Parmesan cheese, shaved, for garnish
  • Red pepper flakes (optional, for added heat)

For the White Sauce (or you can use store-bought white pizza sauce):

  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and white pepper, to taste

How to Make Brussels Sprout and Shishito Pepper Pizza:

If Making Your Own Dough:

  1. Prepare the Yeast: Dissolve sugar in warm water in a bowl, and sprinkle yeast on top. Let it sit for about 10 minutes, until it becomes frothy.
  2. Mix the Dough: In a large bowl, combine flour, salt, yeast mixture, and olive oil. Stir until the dough just begins to come together.
  3. Knead: Turn out onto a lightly floured surface and knead until smooth and elastic, about 7 minutes.
  4. First Rise: Place the dough in a well-oiled bowl, cover with a damp cloth, and set aside to rise for about an hour, or until it doubles in size.

Preparing the Toppings:

  1. Roast the Brussels Sprouts: Preheat your oven to 425°F (220°C). Toss Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast until crispy, about 20-25 minutes.
  2. Prepare the Peppers: In the meantime, toss the shishito peppers with a bit of olive oil and a pinch of salt.

Make the White Sauce:

  1. Melt Butter: In a saucepan over medium heat, melt the butter.
  2. Add Flour: Whisk in flour and cook for 1-2 minutes.
  3. Add Cream: Slowly add heavy cream, whisking continuously until thickened.
  4. Add Cheese: Stir in Parmesan cheese and season with salt and white pepper. Remove from heat once the cheese has melted and the sauce is smooth.

Assemble and Bake the Pizza:

  1. Preheat the Oven: Increase the oven temperature to 475°F (245°C), or as high as it will go.
  2. Prepare the Dough: Roll out the risen dough to fit your pizza pan or stone.
  3. Apply Sauce: Spread a thin layer of white sauce over the dough.
  4. Add Cheese: Sprinkle with shredded mozzarella.
  5. Arrange Toppings: Distribute the roasted Brussels sprouts and shishito peppers over the cheese.
  6. Bake: Place in the oven and bake for about 12-15 minutes or until the crust is golden and cheese is bubbly.
  7. Garnish: Remove from oven, and garnish with shaved Parmesan and red pepper flakes if desired.
