Ingredients List:

  • Apple Pie Filling: 1½ (20-ounce) cans (30 ounces in total).
  • Ground Cinnamon: 1 teaspoon.
  • Ground Nutmeg: ¼ teaspoon.
  • Cinnamon Graham Crackers: 1 box.
  • Instant Vanilla Pudding Mix: 2 (3.4-ounce) boxes.
  • Cold Milk: 2 cups.
  • Heavy Cream: 2 cups.
  • Powdered Sugar: ½ cup.
  • Vanilla Extract: 1 teaspoon.
  • Caramel: Homemade Caramel Sauce, caramel dip, or a store-bought caramel topping.

How to Make Caramel Apple Eclair Cake:

1. Prepare Apple Filling:

  • Place the apple pie filling in a bowl.
  • Using scissors, cut the apple pieces into smaller chunks to avoid large chunks in the final dessert.

2. Spice Up the Filling:

  • To the apple pie filling, add the cinnamon and nutmeg. Mix well.

3. Prepare Pudding Mixture:

  • In a separate bowl, combine the instant vanilla pudding, milk, and powdered sugar.
  • Add the heavy whipping cream and vanilla extract to the mixture.
  • Use a hand mixer to beat the mixture until it becomes creamy and thick. This should take about 3-4 minutes.

4. Begin Layering:

  • Start by placing a layer of cinnamon graham crackers at the bottom of your baking dish or pan.
  • Over the graham crackers, spoon half of the apple filling.
  • Next, spread half of the pudding mixture over the apple pie filling, ensuring it’s spread evenly.

5. Repeat Layering:

  • Add another layer of graham crackers over the pudding mixture.
  • Repeat with another layer of apple pie filling and vanilla pudding.
  • Finish with a final layer of graham crackers on top.

6. Caramel Topping:

  • Warm the caramel topping in the microwave until it’s pourable.
  • Carefully pour and spread the caramel over the top layer of graham crackers, ensuring an even spread.

7. Let the Caramel Apple Eclair Cake Chill:

  • Place the assembled cake in the refrigerator.
  • Allow it to chill for at least 4-6 hours. For optimal results, it’s recommended to chill overnight.
