Castella Cake is a soft, sweet sponge cake from Japan. It’s easy to make and very yummy. Try it for a special treat!
Ingredients:
- 4 large eggs
- 2/3 cup sugar
- 1/3 cup honey
- 3/4 cup all-purpose flour
- 1 tbsp corn syrup (optional for glaze)
Before baking your Castella Cake, remember these quick tips: Use room temperature ingredients for better mixing. Beat eggs and sugar well for fluffiness. Sift flour for lightness. Mix gently to keep the cake airy. Now, you’re ready to bake!
Instructions:
- Preparation: Preheat your oven to 325°F (160°C). Line an 8-inch square baking pan with parchment paper.
- Egg Mixture: In a large bowl, beat the eggs with an electric mixer until frothy. Gradually add the sugar while continuing to beat until the mixture is pale and thick.
- Adding Honey: Gently warm the honey (to make it easier to mix) and add it to the egg mixture. Continue to beat until well incorporated.
- Flour Incorporation: Sift the flour into the mixture in two batches, folding gently after each addition to maintain the airiness.
- Baking: Pour the batter into the prepared pan and tap it gently on the counter to remove air bubbles. Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cooling and Glazing (Optional): Let the cake cool in the pan for about 10 minutes, then remove and cool completely on a wire rack. For a glaze, you can brush the top with a thin layer of corn syrup.
- Serving: Slice the cake into squares or rectangles and serve. Castella cake is best enjoyed with tea or coffee.
