Cheesy Spinach Beef Casserole is a simple dish made with ground beef, spinach, mushrooms, and melted jack cheese. This easy recipe brings a delightful and hearty meal to your table in no time.

Ingredients:

  • 1 lb ground beef (80/20 or leaner)
  • 1 medium onion, diced
  • 8 oz fresh button mushrooms, sliced
  • 1 clove garlic, minced
  • 2 – 12oz packages of frozen spinach
  • Salt and pepper to taste
  • 1/2 cup long grain white rice (dry measurement), prepared according to package directions
  • 1 tsp dried oregano
  • 1 cup sour cream
  • 1 Tbs butter
  • 3/4 cup milk or cream
  • 8 oz shredded Monterrey Jack Cheese (preferably freshly shredded)

How to Make Cheesy Spinach Beef Casserole:

1. Preheat the Oven:

  • Start by preheating your oven to 350°F to ensure it’s ready for baking once the casserole is assembled.

2. Cook the Beef Mixture:

  • In a large skillet or Dutch oven, add the ground beef, diced onion, sliced mushrooms, minced garlic, and dried oregano.
  • Cook the mixture over medium heat, stirring occasionally, until the meat is thoroughly browned and the vegetables are soft and fragrant.
  • Season the mixture with salt and pepper to taste.

3. Prepare the Spinach:

  • Place the frozen spinach in a microwave-safe bowl and microwave for 4 minutes to defrost.
  • Once defrosted, press the spinach against the sides of the bowl to extract and drain off the excess liquid. This step ensures that your casserole won’t be watery.

4. Combine Ingredients:

  • Add the strained spinach to the browned beef mixture, stirring well to combine the ingredients evenly.
  • In a separate small bowl, mix together the cooked rice, dried oregano, sour cream, butter, and milk or cream. Ensure the mixture is creamy and well combined.
  • If the rice is not warm and the butter doesn’t melt, you can microwave the mixture for 45 seconds.
  • Add this creamy rice mixture to the beef and spinach mixture, stirring well to incorporate all the flavors.

5. Assemble and Bake the Casserole:

  • Pour the entire mixture into a medium to large-sized rectangular casserole dish, ensuring it is spread evenly.
  • Evenly sprinkle the freshly shredded Monterrey Jack Cheese over the top of the casserole.
  • Place the casserole dish in the preheated oven and bake for 35 – 40 minutes. The casserole should be bubbling, and the cheese on top should be melty and slightly browned.

6. Rest and Serve:

  • Once baked, remove the casserole from the oven and allow it to rest for 5 minutes. This resting time helps the filling to bind together.
  • After resting, slice the casserole into portions and serve it warm.
