Chocolate Truffles are a luxurious treat made from rich chocolate and creamy heavy cream. This simple recipe creates smooth, melt-in-your-mouth chocolates that you can cover with your favorite toppings like cocoa powder or nuts.

Ingredients:

  • 8 ounces of high-quality dark chocolate (70-75% cocoa)
  • 1/2 cup of heavy cream
  • 1 teaspoon of pure vanilla extract (optional, for flavor)
  • Coatings such as cocoa powder, finely chopped nuts, or sprinkles

How to Make Chocolate Truffles:

  1. Prepare the Chocolate:
    • Finely chop the chocolate to ensure even melting and place it in a heatproof bowl.
  2. Heat the Cream:
    • Pour the heavy cream into a small saucepan and heat over medium heat until it just begins to simmer. Do not let it boil.
  3. Make the Ganache:
    • Pour the hot cream over the chopped chocolate. Let it sit undisturbed for about 2-3 minutes to gently melt the chocolate.
    • Add vanilla extract or any other flavorings at this point if desired.
    • Stir the mixture gently with a whisk or spatula until smooth and fully combined.
  4. Chill the Ganache:
    • Cover the bowl with plastic wrap and place it in the refrigerator for about 2 hours, or until the ganache is firm enough to scoop and roll.
  5. Scoop and Shape:
    • Once chilled and firm, use a teaspoon or a melon baller to scoop out rounds of ganache.
    • Dust your hands with cocoa powder to prevent sticking and roll the scoops between your palms to form balls. If the ganache softens too much during rolling, return it to the fridge for a short while.
  6. Coat the Truffles:
    • Roll the formed balls in the coating of your choice until they are completely covered. This could be cocoa powder, chopped nuts, or sprinkles.
  7. Set the Truffles:
    • Place the coated truffles on a baking sheet lined with parchment paper.
    • Refrigerate for another 30 minutes to an hour to set the exterior coating.
  8. Storing:
    • Transfer the truffles to an airtight container and store them in the refrigerator.
    • When ready to serve, take them out of the refrigerator and let them sit at room temperature for 10-15 minutes for the best flavor and texture.
