- 6 slices of bacon, chopped (or substitute with ham)
- ½ white onion, diced
- 4 cloves of garlic, minced
- ¼ cup of all-purpose flour
- 2 cups of chicken broth (preferably 365 Everyday Value Organic Chicken Broth)
- 2 cups of whole milk
- 2 pounds of organic red potatoes, peeled and diced small
- 1 cup of sharp cheddar cheese, shredded
- ½ cup of sour cream
- ¼ cup of chives, minced
- Kosher salt and black pepper, to taste
Instructions
- In a Dutch oven, cook bacon over medium heat until crispy. Remove bacon and set aside on a paper towel-lined plate, leaving the bacon fat in the pot.
- Add diced onions to the pot and cook until softened, about 5 minutes. Add garlic and cook for an additional minute.
- Sprinkle in the flour and whisk to combine, cooking for about a minute.
- Gradually whisk in chicken broth and milk, ensuring the mixture is smooth and free of lumps.
- Add diced potatoes to the pot. Lower the heat to medium-low and cook until potatoes are soft, stirring occasionally.
- Use a potato masher to gently mash some of the potatoes in the pot, creating a creamy texture.
- Stir in shredded cheese, sour cream, chives, and reserved bacon. Season with kosher salt and black pepper to taste.
- Serve hot, garnished with extra chives or cheese if desired.
Notes
- For a vegetarian version, skip the bacon/ham and use vegetable broth.
