Ingredients

  • 6 slices of bacon, chopped (or substitute with ham)
  • ½ white onion, diced
  • 4 cloves of garlic, minced
  • ¼ cup of all-purpose flour
  • 2 cups of chicken broth (preferably 365 Everyday Value Organic Chicken Broth)
  • 2 cups of whole milk
  • 2 pounds of organic red potatoes, peeled and diced small
  • 1 cup of sharp cheddar cheese, shredded
  • ½ cup of sour cream
  • ¼ cup of chives, minced
  • Kosher salt and black pepper, to taste

Instructions

  1. In a Dutch oven, cook bacon over medium heat until crispy. Remove bacon and set aside on a paper towel-lined plate, leaving the bacon fat in the pot.
  2. Add diced onions to the pot and cook until softened, about 5 minutes. Add garlic and cook for an additional minute.
  3. Sprinkle in the flour and whisk to combine, cooking for about a minute.
  4. Gradually whisk in chicken broth and milk, ensuring the mixture is smooth and free of lumps.
  5. Add diced potatoes to the pot. Lower the heat to medium-low and cook until potatoes are soft, stirring occasionally.
  6. Use a potato masher to gently mash some of the potatoes in the pot, creating a creamy texture.
  7. Stir in shredded cheese, sour cream, chives, and reserved bacon. Season with kosher salt and black pepper to taste.
  8. Serve hot, garnished with extra chives or cheese if desired.

Notes

  • For a vegetarian version, skip the bacon/ham and use vegetable broth.
