  1. Start by grating the cucumber. I use this FANTASTIC grater, which makes it quick and easy.
  2. Wrap the grated cucumber in a towel and squeeze out the excess water.
  3. In a bowl, combine the Greek yogurt and cucumber.
  4. Add minced garlic, olive oil, chopped dill, mint, and lemon juice.
  5. Season with salt and pepper and mix well.
  6. Chill in the fridge for about an hour to let the flavors come together.

Notes

  1. Squeeze the cucumber well after grating to keep the sauce thick.
  2. Fresh dill and mint taste best. Dry herbs can work, but it’s not the same.
  3. Tzatziki is great with grilled meat, as a veggie dip, or on sandwiches.
  4. Keep it in a tight container in the fridge, it’s good for about a week.
