  1. Wash and pat dry the chicken pieces. Season lightly with salt and pepper.
  2. In a large pot, partially submerge the chicken pieces in water. Simmer over low heat for about 10 minutes. Remove and let them cool slightly.
  3. If using Kentucky Kernel Seasoned Flour, skip to step 5. Otherwise, prepare the coating mix in a large bowl by combining Bobโ€™s Red Mill Organic Whole Wheat Flour with The Spice Lab Nashville Hot Chicken Seasoning.
  4. In another bowl, prepare the egg wash by whisking together eggs and evaporated milk.
  5. Dip each chicken piece first in the flour mix (or Kentucky Kernel Seasoned Flour), then in the egg wash, and again in the flour mix.
  6. Heat oil in a deep fryer or large pot to 350ยฐF (175ยฐC).
  7. Fry the chicken pieces in batches until golden brown and crispy, about 15-18 minutes. Ensure an internal temperature of 165ยฐF (74ยฐC).
  8. Drain the chicken on a wire rack set over a baking sheet.
  9. Serve hot and enjoy!
