Peach Ice Cream Dessert

Hey friends! I’m excited to share with you a recipe for one of my favorite summertime treats: a Peach Ice Cream Dessert. It’s a layered delight with a buttery graham cracker crust, sweet peaches, creamy vanilla ice cream, and fluffy whipped topping. It’s simple to make and perfect for cooling off on a hot day. Here’s how I make it:

Ingredients:

  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/3 cup white sugar
    • 6 tablespoons butter, melted
  • For the Peach Layer:
    • 3 cups fresh peaches, sliced
    • 1/2 cup white sugar (adjust according to sweetness of peaches)
    • 1 tablespoon lemon juice
  • For the Ice Cream Layer:
    • 4 cups vanilla ice cream, softened
  • For the Whipped Topping:
    • 2 cups heavy whipping cream
    • 1/4 cup powdered sugar
    • 1 teaspoon vanilla extract
  • For Garnish:
    • Additional peach slices
    • Crushed graham crackers

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter.
    • Press the mixture into the bottom of a 9×9-inch baking dish, forming a firm layer.
    • Chill in the refrigerator while preparing the next layer.
  2. Peach Layer:
    • In a saucepan over medium heat, combine sliced peaches, sugar, and lemon juice.
    • Cook until peaches are soft and the mixture has thickened, about 10 minutes.
    • Let the peach mixture cool to room temperature, then spread over the crust.
    • Freeze for 1 hour to set.
  3. Ice Cream Layer:
    • Spread the softened vanilla ice cream over the peach layer.
    • Freeze again until the ice cream is firm, about 2 hours.
  4. Whipped Topping:
    • In a large bowl, whip the heavy cream until soft peaks form.
    • Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
    • Spread the whipped cream over the firm ice cream layer.
    • Freeze for an additional 1-2 hours or until ready to serve.
  5. Garnish and Serve:
    • Just before serving, garnish the top with additional peach slices and a sprinkle of crushed graham crackers.
    • Cut into squares and serve immediately.
