Pecan Pie Cheesecake Bars are a sweet treat with three layers: a crunchy graham cracker crust, a creamy cheesecake center, and a gooey pecan pie topping.

Ingredients:

Crust:

  • 2 cups graham cracker crumbs (roughly 16 full graham crackers)
  • 1/4 cup sugar
  • 1/2 cup butter, melted

Cheesecake Layer:

  • 2 packages (8 ounces each) of cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

Pecan Pie Topping:

  • 1/4 cup butter
  • 1/2 cup heavy cream
  • 1 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup light corn syrup
  • 2 cups pecans, chopped

How to Make Pecan Pie Cheesecake Bars:

1. Preparing the Crust:

  • Begin by placing the graham crackers in a food processor and pulsing until you achieve fine crumbs.
  • Add the sugar and melted butter to the crumbs, and pulse again to combine everything evenly.
  • Press this mixture firmly into the base of a greased 13″ x 9″ baking dish, creating an even layer. Set aside.

2. Creating the Cheesecake Layer:

  • In a large mixing bowl, add the softened cream cheese and sugar. Using an electric mixer, beat until smooth and creamy.
  • Incorporate the eggs one at a time, mixing well after each addition.
  • Add the vanilla extract and mix to combine.
  • Gently spread the cream cheese mixture over the prepared crust in an even layer.
  • Place the dish in the refrigerator and allow it to chill for at least 30 minutes.

3. Preparing the Pecan Pie Topping:

  • In a medium saucepan, melt the butter over medium heat.
  • Once melted, add the heavy cream, brown sugar, vanilla extract, and corn syrup. Stir to combine.
  • Allow the mixture to come to a gentle boil, stirring continuously.
  • Add the chopped pecans and stir until they are fully coated with the mixture.

4. Assembling and Baking:

  • Preheat your oven to 350°F (175°C).
  • After the cream cheese layer has chilled, pour the pecan mixture over it, spreading evenly.
  • Place the baking dish in the preheated oven and bake for approximately 40 minutes, or until the top is golden brown and the filling has set.
  • Remove from the oven and allow the bars to cool to room temperature. Then, refrigerate for several hours to allow the layers to set.
