  2. Mix Cinnamon and Sugar: On a plate, mix the caster sugar and ground cinnamon. This will be used for coating your roll-ups later.
  3. Prepare Your Brioche: Butter one side of each brioche slice. Place a row of raspberries at the bottom edge of each slice, then roll up tightly.
  4. Dip and Fry: Dip each roll-up into the egg mixture, ensuring they’re well coated. Heat a knob of butter in a non-stick frying pan over medium heat. Fry the roll-ups, turning until golden brown all around.
  5. Coat in Cinnamon Sugar: Roll the cooked roll-ups in the cinnamon-sugar mixture until fully coated.
