Start your day with French Toast Raspberry Roll-Ups, combining brioche, fresh raspberries, and cinnamon sugar for a perfect breakfast or brunch treat!

- 2 slices of St. Pierre Sliced Brioche Loaf (Find it on Amazon)
- 2 eggs
- 1 tsp vanilla extract or paste (Nielsen-Massey Vanilla Paste preferred for extra flavor)
- 1–2 tbsp caster sugar
- 1 tsp organic ground cinnamon
- A knob of butter for frying
- A handful of fresh raspberries
- Maple syrup for drizzling (the more, the merrier!), I personally use Maple Grove Farms Organic Pure Maple syrup
Instructions
- Prep Your Egg Mix: In a bowl, whisk together the eggs and vanilla until well combined. Set aside.
- Mix Cinnamon and Sugar: On a plate, mix the caster sugar and ground cinnamon. This will be used for coating your roll-ups later.
- Prepare Your Brioche: Butter one side of each brioche slice. Place a row of raspberries at the bottom edge of each slice, then roll up tightly.
- Dip and Fry: Dip each roll-up into the egg mixture, ensuring they’re well coated. Heat a knob of butter in a non-stick frying pan over medium heat. Fry the roll-ups, turning until golden brown all around.
- Coat in Cinnamon Sugar: Roll the cooked roll-ups in the cinnamon-sugar mixture until fully coated.
- Serve: Place your delicious roll-ups on a plate, drizzle generously with maple syrup, and enjoy!
