Ingredients:

  • 1 pound of breakfast sausage
  • 3 cups of shredded hashbrowns, thawed
  • 1 and 1/2 cups of sharp cheddar cheese, grated
  • 1/4 cup of onions, finely chopped
  • 1/4 cup of green bell pepper, finely chopped (optional)
  • 2 large eggs
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of garlic powder
  • Cooking spray or oil for greasing

Instructions:

  1. Preheat your oven to 400°F (200°C). Grease a mini muffin tin with cooking spray or oil and set aside.
  2. In a skillet over medium heat, cook the sausage until it’s browned and crumbled. Drain the excess fat and let it cool slightly.
  3. In a large bowl, combine the shredded hashbrowns, cooked sausage, grated cheese, chopped onions, and bell pepper if using.
  4. In a separate bowl, whisk together the eggs, salt, black pepper, and garlic powder.
  5. Pour the egg mixture into the hashbrown mixture and mix until well combined.
