Ingredients:

  • 1 lb flank steak or skirt steak
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 6 small corn tortillas
  • 1 cup shredded cheese (such as Monterey Jack, cheddar, or a Mexican blend)
  • 2 tbsp unsalted butter
  • Optional garnishes: diced onions, cilantro, lime wedges, sour cream, salsa

Instructions:

Steak Preparation:

  1. Season the steak generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook the steak for about 5-7 minutes on each side for medium-rare, or until it reaches your desired level of doneness.
  4. Let the steak rest for a few minutes before slicing it against the grain into thin strips.

Taco Assembly:

  1. Heat a clean skillet over medium heat and melt a bit of butter in it.
  2. Place a corn tortilla in the skillet and sprinkle cheese on one half.
  3. Add a portion of the sliced steak on top of the cheese.
  4. Fold the tortilla over with a spatula to form a half-moon shape.
  5. Cook until the tortilla is golden brown and crispy, then flip to cook the other side, making sure the cheese is fully melted.
  6. Repeat with the remaining tortillas, adding more butter to the skillet as needed.

Serving:

  1. Serve the tacos hot, garnished with your choice of onions, cilantro, lime wedges, sour cream, or salsa.
